Method

  1. Cook the pasta following the packet instructions. Whisk the cream and egg yolks together. Drain the pasta and then tip it back into the saucepan along with the egg mixture and Parmesan and stir. The heat from the pasta should cook the egg.
  2. Heat a good knob of butter in a frying pan and fry the sage leaves and courgette until the butter starts to brown and they crisp up. Squeeze in a little lemon juice. Divide the pasta between 2 bowls and tip the courgette and sage mixture over.
