Baked raspberry cheesecake

Method

  1. Heat the oven to 180C/fan 160C/gas 4. Crush the biscuits in a food processor (or put in a plastic bag and bash with a rolling pin). Mix with the butter. Press into a 20cm springform tin and bake for 5 minutes, then cool.
  2. Beat the cream cheese with the flour, sugar, a few drops of vanilla, eggs, the yolk and soured cream until light and fluffy. Stir in half the raspberries and pour into the tin. Bake for 40 minutes and then check, it should be set but slightly wobbly in the centre. Leave in the tin to cool.
  3. Keep a few raspberries for the top and put the rest in a pan with 1 tbsp icing sugar. Heat until juicy and then squash with a fork. Push through a sieve. Serve the cheescake with the raspberry sauce and raspberries.

    Yum!!!! I made this yesterday for a dinner party and it went down really well with everyone. I used blueberries instead of raspberries and made the sauce to go with it. It was the first time I baked a cheesecake and was really worried it would go wrong. wasn't quite sure how long to beat the batter for but i spent a long time doing but it didn't go fluffy..but it still turned out great! (and i left it in the oven a little longer than said in the recipe) thank you! I will definately be making this again..

    WOW. You will never buy another shop made cheesecake after this - its easy and tastes so good. We agree with others, its even better the next day, so make in advance. In addition we used "light" soft cheese and no effect on taste. We used blueberry too, as they were available on the day. Thank you bbc! :0)

    Very easy cheescake recipe. Have made with raspberries and blueberries and also with a frozen summer fruits mix which also worked well. I also added some crushed walnuts into the base for a extra bit of nuttiness and it went down a treat. Also always make with one tub of light Philly and one full fat.

    I absolutely love cheesecakes in general - this one was tasty but a bit too light for me!! - biscuit base needed to be crunchier. Saying that everyone loved it and asked for more :-)

    Bit late at commenting on this but made for my mums birthday, used a mixuture of blueberries strawberries and raspberries for the top and also added chopped white chocolate...went down a treat!

    Really nice but I've made better. I was swayed by all those brilliant reviews and 5 star ratings but I'll continue to use my other recipies in future. Still 5 stars though - I enjoyed it, as did my guests.

    i just made this for bf and he loved it, i would of like a chocolate one though lol but it was very nice and creamy but what i really liked was the fact that it wasnt too filling and my house mate really liked it to . defo 5 star!

    Really easy to make. Mine cracked on cooling, but was covered by the sauce and extra raspberries. Would add extra icing sugar to the sauce as was quite tart. Used frozen raspberries (frozen in recipe but defrosted for topping) as a cheaper alternative.

    I only had a 23cm springform tin, I doubled the biscuit mix, but keep the filling the same. It turned out a treat!! It was even mentioned that it was the best cheesecake they've ever tasted! Very simple- a real dinner party essential.
