Method

  1. Heat the oven to 180C/fan 160C/gas 4. Crush 8 digestive biscuits in a food processor (or put in a plastic bag and bash with a rolling pin). Mix with 50g melted butter. Press into a 20cm springform tin and bake for 5 minutes, then cool.
  2. Beat 600g cream cheese with 2 tbsp flour, 175g caster sugar, a few drops of vanilla extract, 2 eggs, 1 yolk and a 142ml pot of soured cream until light and fluffy. Stir in 150g raspberries and pour into the tin. Bake for 40 minutes and then check, it should be set but slightly wobbly in the centre. Leave in the tin to cool.
  3. Using the remaining 150g raspberries, keep a few for the top and put the rest in a pan with 1 tbsp icing sugar. Heat until juicy and then squash with a fork. Push through a sieve. Serve the cheescake with the raspberry sauce and raspberries.

    My brother made this for a family dinner and it went down a storm. I have since made it for a party and again it was a huge success. It really is a simple recipe but tastes much more complicated than it is, a great way to impress.

    I made this with strawberries instead of raspberries for my boyfriend's birthday and it was very well received. What I did differently from the recipe though was that I put all the berries in the cake and had extra strawberries that I made into chunky compote to pour over the piece of cake before eating.

    I've always been in two minds when it came to cheesecake. This however, is by far the best cheesecake I have ever had. I made it for a smalll dinner party and it went down a treat. I'm still being asked to make it on a regular basis.

    I tried this receipe as my thanks giving pie, it went down very well, although their were a few ingredients it actually was suprisingly easy to make. Will be doing it again at christmas, as requested by my sister

    Easy peasy gorgeous cheesecake. Wonderfully light and not at all sweet and sickly like some cheesecakes. Only problem is you want to keep eating it!

    This was my first attempt at a baked cheesecake. What a success, everyone loved it. I also used the basic recipe (omitting the fruit) and made a lemon compote for the top. Yum Yum!

    I couldn't get rasberries so used blackberries instead to good effect. It was delicious and a doddle to make. However, it is quite expensive... and don't even think about the calories! Definitely a dessert for special occasions only!

    I've made a baked cheesecake before which was a lot more expensive and complicated than this recipe. I made it for an Uncles 80th birthday dinner and it went down a storm. He commented that it was lovely and he didn't realise I could do such a thing! I left the recipe at my Mum's and she read it and said it sounds easy to make. I think it would also work well with any soft fruit... bring on the blackcurrants!

    This recipe is ever so easy, particularly if you have a husband to bash the biscuits and stir the mixture. I have made it on two occasions and it prompted enthusiastic comments from adults and children. The first time I did two - one raspberry and one blueberry. The blueberry was our favorite. And it looks so impressive. No one could believe we'd made it ourselves!

    I made this last night for a dinner party and it was amazing ,i have made baked cheesecake before but it wasn't as good as this .It is so easy and looks brilliant there wasn't a scrap left on any plates and i will definetly make this again. Has anyone made it with low fat cream cheese? would that work?
