Sweet potato gratin

This is a great Sunday lunch side dish and makes an indulgent alternative to traditional potatoes

Method

  1. Heat the oven to 190C/fan 170C/gas 5. Put all the ingredients except the sweet potatoes in a small pan, season really well and bring to just below boiling point. Arrange the sweet potato slices in a shallow ovenproof dish and pour over the infused cream. Bake for 30-40 minutes until the potato is tender and the top golden and bubbling.

    WOW even my husband loved this and he doesn't even like sweet potato. It went really well with the slow roast pork .

    I served this as side dish with a roast gammon meal and it proved to be very popular. ( I added a few extra tablespoons of cream - possibly not necessary, but it was beautifully rich and creamy as a result). Lots of flavour.
