Purple sprouting broccoli with prosciutto & duck egg

Purple sprouting broccoli works really well with the punchy flavours of salty prosciutto and parmesan

Method

  1. Grill the prosciutto until crisp. Steam the broccoli until just tender, but still bright green - test a stalk with the point of a knife. Divide between 4 shallow bowls and drizzle with a little olive oil and balsamic.
  2. Top the broccoli with pieces of crisp prosciutto and parmesan. Poach the duck eggs in a frying pan of simmering water for 3-4 minutes or until cooked to your liking (2-3 minutes for hen's eggs). Lift out, drain and add one to each bowl. Sprinkle with sea salt flakes and black pepper and serve.

    Had a head of broccoli and wanted something light and low-carb for lunch and was stuck for ideas - so I liked the look of this, but cheated a bit, using lean bacon chopped and fried in frylight until crispy, microwaved the broccoli for a minute and a half, poached a large fresh free-range egg from my neighbour's hen, but stayed true to the rest of the recipe and served it with a large tomato, halved and grilled with oregano on top... yummy!

    I'm often stuck for an easy and quick recipe for a small snack at lunchtime. This sounds ideal and i'll be able to use the lovely fresh eggs from my own chickens. The suggestion of using crispy lean bacon or even grilled turkey, rashers is great, thanks!
