Gateaux au chocolat chaud

Make this indulgent chocolate pudding just before serving to make sure the oozy sauce doesn't set

Method

  1. Melt the chocolate gently in a bowl set over a pan of simmering water. Whisk together the eggs and sugar until light and fluffy and doubled in volume. Stir the melted butter into the chocolate, then fold it into the egg mixture. Whisk in the flour and add the Cognac to taste (about 3 tbsp), then chill for several hours.
  2. Heat the oven to 200C/fan 180C/gas 6. Butter and flour 10 metal basin-shaped moulds or ramekins. Spoon the mixture into the moulds and bake for 8-10 minutes until just firm on top. Turn out onto individual plates before serving. Serve immediately or you won't have a sauce in the centre.

    They were a huge success with friends who came for dinner and love chocolate. Will definately be making them again. I stuck with 3tbsp of brandy and to be honest it was enough.

    This was one of the best and easiest chocolate puds of all time and everyone loved it. I served it with rasberries and a scoop of vanilla ice cream on a large plate, dusted with icing sugar. It tasted as fantastic as it looked. Very impressive!

    Heaven on earth! I added a square of chocolocate (caramel mousse) to each ramequin-simply delicious. Great desert for a dinner party as you can prepare even the day before and leave it in the fridge, just take it out an hour or so before hand to bring it to room temperature.
