Baked gammon with spiced oranges

Method

  1. Put the syrup, sugar and the juice from 2 of the oranges in a pan. Slowly bring to the boil, then leave to cool.
  2. Decorate the ham by scoring the fat with a knife to make large diamond shapes. Cut the 2 remaining oranges into slices and lay over the ham, pinning in place with the cloves.
  3. Brush the ham all over with the sugar mixture then put it on a trivet in a roasting tray. Pour 1 litre of water into the tray and cover with foil. Bake the ham for 2 hours 20 minutes, remove from the oven and take off the foil. Cook for a further 40 minutes until well coloured.

    I did this for boxing day and it was a really good piece of ham. It went down a storm with the family and even my Mum asked for the recipe. As regards temperature, i did it at 190oC for the time it says and that was fine.

    Liked it, but didn't get enough of the glaze flavour as it didn't stick enough. next time I think I might stab the meat before glazing it to try and get the glaze to soak in a bit more

    Made it this weekend and I agree the glaze did not stick but it is lovely poured on it when you serve it out! So a crowd pleaser all around!

    tastes lovley but the orange slices burnt so i had to take them off half way through cooking which was a shame, but overall it tasted good!

  • 4 oranges
  • raw ham on the bone, smoked or unsmoked, 3-4kg (ask the butcher to remove the rind, leaving a layer of fat)
  • 12 whole cloves
