Spaghetti with clams, chilli & rocket
Clams are at their best in cold winter months, but this dish is delicious all year round

- Cook the pasta following the packet instructions. Sizzle 200ml olive oil and the butter in a pan, then throw in the clams and garlic, and toss well. Add the wine, cover and cook for 2 minutes until the clams start to open, then add the chilli and season (throw away any clams that haven't opened). Drain the pasta, add to the clams, then throw in the rocket and stir until it begins to wilt slightly. Serve with Parmesan and a good grind of black pepper.

- 100ml white wine
- 3 red chillies , finely chopped
- 100g rocket
- parmesan shavings, to serve
