Anzac biscuits

These iconic biscuits were originally made to send to the ANZACs (Australian and New Zealand Army Corps) serving in Gallipoli

Method

  1. Heat oven to 180C/fan 160C/gas 4. Put the oats, coconut, flour and sugar in a bowl. Melt the butter in a small pan and stir in the golden syrup. Add the bicarbonate of soda to 2 tbsp boiling water, then stir into the golden syrup and butter mixture.
  2. Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently to incorporate the dry ingredients.
  3. Put dessertspoonfuls of the mixture on to buttered baking sheets, about 2.5cm/1in apart to allow room for spreading. Bake in batches for 8-10 mins until golden. Transfer to a wire rack to cool.

    Argh! Wish I'd read the comments more closely, 1 tsp of bicarb is waaaaaay too much, I'm going to have to throw out the whole batch, what a waste. :-(

    These biscuits were so simple to make. If they last the evening it will be a miracle!! Used maple syrup instead of golden as its all I had in the cupboard and they are fab!

    Usually my biscuits are failures of some kind or other. Sometimes spreading so that I end up with a biscuit 20cm by 12cm, but these little 'darlings' behaved themselves. Everyone enjoyed them and a friend is making some to take to The Dorset Steam Fair this September, probably will resemble the Somme if the weather doesn't hold out.

    Made these today, tasted nice though a little to sweet. If I make them again would use a little less sugar, and because of previous comments only used half tsp of bicarb. I also cooked them for a little longer than stated and the texture turned out just right.

    Really easy and we love them. Used half quantity of sugar and used honey instead of golden syrup and they are sweet, crunchy on the outside and chewy in the middle. Also left out the coconut as didn't have any and so didn't use all of the liquid in the end so as not to make the mixture too wet.

    Not what I was expecting at all. The actual biscuit was more a soft cookie-not crunchy, not chewy; just soft (even after baking for 15 minutes) If you are going to attempt this be prepared to add some more liquid when you make the biscuit mixture as the recipe's amount of liquid really isn't enough.     Gorgeous - just what I was looking for - remind me of the best simple home cooking. Not sure what they taste like completely cold yet! Thanks for the tips, they came in really handy ... I hand rolled them really quite small as my tester tray spread too much. Will definitely make again.

    This was very simple and very yummy (especially before it was cooked!) I reduced the sugar to 80g and added 50g of chopped apricots, a bit of vanilla and a tsp of cinnamon, which was very nice. Next time I think I'll try adding some other dried fruit such as dates, and maybe make each biscuit a little smaller (I rolled mine into balls about 2.5 cm in diameter and then flattened them slightly) and flatten them a bit more so they're thinner

    I've been using this recipe for years and it's always been a great favourite with my children and grandchildren BUT I've always called them CHORNS and as far as I'm aware it was an old Cornish recipe. I also add variations in the form of sesame or sunflower seeds or chopped mixed nuts to make them even more nutritious and crunchy. They freeze well so it's worth making a large batch because they disappear very quickly.

    Just made these today and they turned out lovely!! Luckily I read all the comments first about them coming out a bit dry so i added an extra tbsp of hot water (thats 3 in total) and also a bit xtra melted butter - approx 25g and it came together really well then - also I only added 1/2tsp of bicabornate soda as suggested by others and they were totaly delicious!! I only managed to get 15 out of them though so might of made them a bit big but noone seemed to mind! lol!! overal a great success will defenetly be making these again - they were lovely & soft & chewy - oh and I also drizzled melted chocolate all over them while they were cooling to make them totaly yummy!! :-D
