Anzac biscuits

These iconic biscuits were originally made to send to the ANZACs (Australian and New Zealand Army Corps) serving in Gallipoli

Method

  1. Heat oven to 180C/fan 160C/gas 4. Put the oats, coconut, flour and sugar in a bowl. Melt the butter in a small pan and stir in the golden syrup. Add the bicarbonate of soda to 2 tbsp boiling water, then stir into the golden syrup and butter mixture.
  2. Make a well in the middle of the dry ingredients and pour in the butter and golden syrup mixture. Stir gently to incorporate the dry ingredients.
  3. Put dessertspoonfuls of the mixture on to buttered baking sheets, about 2.5cm/1in apart to allow room for spreading. Bake in batches for 8-10 mins until golden. Transfer to a wire rack to cool.

    I dont no what i did wrong but the mixture was too dry i ended u p making them into balls cooked them but they just wasnt right the only thing i can think of is i used quick cooking oats will try again using ordinary oats

    Lovely easy biscuits. Mine were soft and my husband would have liked more crunch. Next time I will lift them off the baking sheet quicker to cool.

    Fab.Crunchy around the edges and soft and chewy in the middle. Very like the cookies from Millies. My husband doesn't like coconut (weirdo) so i left it out and added two balls of stem ginger chopped finely

    Had the same trouble as caroline, but used ordinary porridge oats. They were really dry and leave a very nasty aftertaste. Used sugar i found in the cupboard - does sugar go off? Otherwise any ideas where i went wrong? should i have added more syrup?

    These were nice but I like my biscuits more crunchy not as chewy as these were.They did go down very well but I wouldn't make again as they were too soft

    The first time I made these I'd run out of golden syrup so I used honey instead - very yummy and the whole family enjoyed them. Today I've made them with golden syrup and they're going down just as fast! Very easy too.

    Had the same problem as Caroline and TweedleTwo... I followed the recipe to the letter: the mix was really dry, more like muesly crumbles than a dough. I tried a few dessertspoonfuls that looked like heap of powder. Then I tried to firmly press the mix into small flat balls. I cooked at the suggested temperature, under it, over it... For longer or shorter time... Whatever method I tried the results were *at best* extra-dry super-brittle cookies. Could anyone help us, please? Please! :'-(

    Really enjoyed these biscuits, my children loved them and they were very easy to make. I'm going to try chopped glace cherries in the mix next time I make them.

    I also had the dry mix problem. I think this was because I use a scoop type spoon to measure, maybe a proper table spoon would hold more liquid. Anyway, I added more hot water and the mixture became much more workable. Not sure if I would make them again as I much prefer making melted moments.

    These are yummy, i dont make mine with coconut though. Be warned if you cut the sugar or syrup it will ruin the texture of the biscuit. More syrup = more chewy and less sugar = very crumbly! Id stick to this recipe! Delish :)

    i've never seen my boyfriend eating cookies in such amounts :) very tasty, very easy to make. used a little less sugar and and little more syrup (sugar-beet instead of golden, not so sweet).

    Just like Granny used to make. I've been looking for this recipe for years-Delia has one but its not as good as this. I used stork instead of butter and added some dried cranberries. Slightly overcooked the first batch so they are crisp(still lovely) but second batch have that chewy/crisp combination i remember from my childhood.
