Spinach, bacon & new potato salad
A warm salad full of your favourite ingredients that is equally good as a main or a side

Ready in 20 mins
- Boil the potatoes until tender, about 10 minutes. Grill the bacon until crisp and golden, then cool and break into pieces. Toss the spinach and potatoes with half the dressing. Divide between 2 plates and top with the bacon. Drizzle with extra dressing and scatter the parmesan shavings over.

- 3 tbsp salad dessing (3 tbsp olive oil, 1 tbsp red wine)
- vinegar whisked with 1 tbsp wholegrain mustard and seasoned
- a handful parmesan shavings
