Seared salmon with lime aïoli and watercress
A light, healthy meal given extra zest with the citrussy condiment

- Heat a little olive oil in a frying pan and cook the salmon steaks on both sides until they are browned and cooked through.
- Meanwhile, add enough lime juice and zest to the mayonnaise along with the garlic to give it flavour without making it too sloppy. Add the remaining juice to the salmon in the pan. Season. Serve the salmon with the lime aïoli and watercress.
