Method

  1. Cook the pasta following the packet instructions, drain.
  2. Meanwhile, tip the tomatoes, olives, capers and basil into a bowl and season well. Tip in the pasta and toss to combine. Add the goat's cheese in blobs and toss once.

    This recipe is one of my families favourites. I roast the tomatoes slightly as the pasta boils though as I find they cool the dish down too much if added cold!

    great recipe and really easy, light and quick to make. I added roasted pine nuts and some fresh pesto, an upted to amount of tomatoes and olivers slightly. The goats cheese melts and covers the linguine when you toss the pastat, which makes it nice and creamy without being heavy.

    Surprisingly tasty, I only cooked this because of the good reviews and they were right, its easy and very palatable. I put 100g of goats cheese in which was a bit OTT but nevertheless lovely as the lady on the deli counter at my local supermarket when I asked for '50g of goats cheese...it doesnt matter if its a bit over' said '100g that'll be ok wont it love?' (!) I didnt like to disagree and indeed it was.
