Method

  1. Put the caster sugar in a pan with 100ml water. Heat slowly until the sugar has dissolved, then add the chilli and boil until the liquid becomes syrupy. Cool. Add the lime zest and juice. Lay the pineapple slices on a plates and drizzle the syrup over.

    Made this loads of times now and it never fails to surprise and impress, which is great considering how simple it is. I've even had friends drinking the syrup from the serving platter afterwards!

    Wowsers - this is a great taste sensation! I doubled the recipe (not the chilli bit though) and served to six girl-friends. They all loved it, really light but deliciously unusual combination of flavours.

    Absolutely agree with all of the above. I served it with greek yoghurt too but I think it might be even better with coconut ice cream...

    Made this tonight for dessert and it was really spicy, but quite nice. I made half the quantity for two people and only put one chili in but didn't take the seeds out, might do that next time for a little milder version.

    I actually had this at a family Italian rest.so came home to recreate it.looked it up on Internet and hey presto here it is! It was served with coconut ice cream . I have it in my mind the syrup had fresh ginger in.perhaps that was another desert!
