Banoffee tarts

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Cut 4 circles about 10cm in diameter from the pastry sheet, prick them gently with a fork then lay on a non-stick baking sheet. Divide the banana slices between them (in a single layer), leaving a 11/ 2cm border around the edge of each and sprinkle brown sugar over the bananas.
  2. Bake for 20-25 minutes until the pastry is puffed, golden and crisp. Top each puff with a scoop of vanilla ice cream, spoon over Carnation caramel or dulce de leche and decorate with chocolate shavings.

    Really good, I made the pastry/banana bases in advance as suggested and just reheated them before serving which worked really well.

    Left out the pastry to save on calories. Made it just for myself, so cooked half a banana with just under half tblsp brown sugar in a saucepan till the sugar dissolved and the bananas softened. Topped with a scoop of ice cream, chocolate shavings and Carnation caramel sauce. Absolutely delicious! I think the pastry would be nice for presentation when making for guests.

    We baked the puff pastry (reduced fat version) for 10 min first, then added the bananas and sugar and baked for another 10 minutes before adding the rest of the toppings. We also used milk chocolate chips instead of shavings and lots of warm Dulce de Leche. It was so decadent!

    Had friends round for mid week supper and wanted something easy and cheap but which looked good and this fitted the bill exactly. It was just the right portion size and I will definitely make it again.
