Salmon with lemon pesto crust

Method

  1. Heat the oven to 220C/fan 200C/gas 7. Press the breadcrumb mix all over the top of the salmon fillets. Bake for 10-12 minutes until the crust is turning golden and the salmon is just cooked. Serve with the tenderstem broccoli and lemon wedges.

    I saw this in the magazine and what i liked most about the recipe was that i had everything to hand to make it that night which i did it was a resounding success and has become a firm family favourite. My family thought i had taken hours to prepare such a dish i didn't tell them that it didn't! Try it you will love it - it brings salmon to life.

    I think i used too much pesto and breadcrumb mix which over powered the salmon, may try it again but less pesto?

    Had some salmon tails and hubby not to keen on it but I love it and he actually said this was fantastic, wants it again and made salmon tasty - can't get better than that. I didn't really follow it to the letter - had read this in the morning and made in the evening so not sure hhow like it it was but hey a success anyway!!! Very, very easy and looks like you've spent much more time and efort.

    This really is super easy and super quick. I made it with tomato pesto as that's all I had and added some roast tomatoes alongside to serve. If you wanted a mid-week supper to cook for friends which was extremely quick but looked like you'd made the effort, this is it.

    Made this for tea last night and it was really, really good. I had everything in, really quick to prepare and the crispy topping was a lovely flavoursome contrast to the succulent salmon. I served it with new potatoes, mayonnaise and green beans with the suggested lemon and olive oil dressing.

  • a handful of white breadcrumbs , mixed with a little lemon zest and 2 tbsp of pesto
  • lemon wedges, to serve
  • 200g tenderstem broccoli , steamed for 4 minutes and dressed with a little olive oil and lemon juice to serve
