Method

  1. Heat 2 tbsp oil in a pan, add the courgettes and fry gently until they start to go golden. Season, add a splash of water and cook while stirring and mashing to break the courgette down; this should take about 10 minutes. Add the garlic and chilli and cook for 2 minutes. Add the prawns, 2-3 tbsp chopped tomatoes and basil, season and cook for 5 minutes then add 1-2 tbsp olive oil.
  2. Toss the linguine through the sauce and serve.

    Made this twice now although family not big courgette fans - and its a big hit. Find the chilli improves the flavour and prefer a bit extra. A big plus for me is making the sauce a bit before its needed and just cooking the pasta before serving - allowing you to be sociable without being in the kitchen for ages before serving.

    Yum yum. My husband wasn't convinced when I told him what was for dinner but he thoroughly enjoyed it and I'm sure it will become a household dish! Although, I did change a few things - used a couple of fresh tomato's instead of tinned and added a little Chorizo sausage instead of chilli flakes! Success!

    So quick, easy yet absolutely delicious! I added some chopped up red pepper and white wine instead of water and a little concentrated chicken stock to enhance the flavour. Also, I used the same amount of chopped toms (200g) just for two people. I'm not sure about cooking already cooked prawns for 5 minutes though, wouldn't they turn out chewy? I used raw prawns and only added them in the end and cooked till they had just turned pink (about 2 min). Perfect. Will make this again.

    Made this for dinner tonight for me and my boyfriend. I thought it was lovely! He says he liked it, but you never know with him. Haha. One thing I did notice though, in the picture it is very colourful looking, mine looked very dull. Any ideas why??

    Firm favourite in our household - quick and easy to make too. I make for 2 but use half a 400g tin tomatoes. The other half can be wizzed and frozen for next time. Sometimes put mushrooms in and thinking of adding some crab meat for supper with friends

    Great dish. I used raw prawns. Might try it with chicken next time. Added extra chilli so it had a tidy kick. Will cut the courgettes thicker next time, they shrunk too much. I used the basil which i loved, but my question is would dry basil be any good or can you freeze the fresh stuff? I paid 79p for it and only used a few leaves, seems such a waste (and i'm trying to watch the pennies) Can anyone help me on this one please?

    Hi cookie62, I freeze most herbs (rosemary, thyme, coriander, parsley) with no problem. never done basil though. Why not buy a pot plant of basil? i find as long as you water it from the roots it lives and grows with little effort, and i live in a flat!
