Method

  1. Heat 2 tbsp oil in a pan, add the courgettes and fry gently until they start to go golden. Season, add a splash of water and cook while stirring and mashing to break the courgette down; this should take about 10 minutes. Add the garlic and chilli and cook for 2 minutes. Add the prawns, 2-3 tbsp chopped tomatoes and basil, season and cook for 5 minutes then add 1-2 tbsp olive oil.
  2. Toss the linguine through the sauce and serve.

    I made it with fresh tomatoes (remove the seeds) instead of tinned and used mixed seafood. It was delicious, very fresh and light. I'll be making this again for sure.

    This was great!!!! :0) As previous comments - this is light and fresh. The colours are good too. I added some wine and the tin of toms, with juice, I then part cooked spagetti then added it to the pan - this soaked up the extra liquid from the toms/wine. As others, I added extra garlic (3) and a little extra chilli. Will certainly be making again. It went down a storm. Happy days bbc!

    I tried this last night, as I have a glut of courgettes from the allotment. I didn't bother cooking the courgettes for 10 minutes as we cut them up very thinly, so they only took a couple of minutes (I also didn't mash them). In fact you can do this dish in the time it takes to cook the pasta! I also used a tin of chopped tomatoes not 3 spoonfuls as the recipe suggested. I was really surprised how nice it tasted!

    Well what can I say, I could eat this every night. It was amazing, I added double the quantity of evertything as my husband is big on pasta. Worked really well and he thoroughly enjoyed it. I wanted to get it right so the prep was longer but who cares when a dish like this turns out. Cooking it again next week. You will not be disappointed.

    Yummy scrummy - very good indeed. Added some aubergine with the corgette and use passattan and half a fresh chilli. Could be made with chicken or salmon and would work equally well I would say.

    followed the recipe as it is,really easy & tasty,made a 2nd time with bacon & 3rd with beef just as good each time,I also discovered I now really like fresh basil big time
