Method

  1. Heat 2 tbsp oil in a pan, add the courgettes and fry gently until they start to go golden. Season, add a splash of water and cook while stirring and mashing to break the courgette down; this should take about 10 minutes. Add the garlic and chilli and cook for 2 minutes. Add the prawns, 2-3 tbsp chopped tomatoes and basil, season and cook for 5 minutes then add 1-2 tbsp olive oil.
  2. Toss the linguine through the sauce and serve.

    Absolutely one of my favourites now!!! Instead of a splash of water, I put in some white wine and I use fresh tomatoes - puts it in an altogether new league. Yum!

    I expected this meal to be rather bland, but it was actually very flavourful! Don't be fooled by the fact that the recipe appears rather simple; I would not only make it again, but make it for guests as well! Try this recipe, I can assure you that you won't regret it!

    Simple and delicious, just made this for my girlfriend and she said it was as good as you'd get in a restaurant. I used chilli oil when cooking the courgettes to give it even more kick, yum!

    well its one way to over cook the zucchini. the tomatoes are completely unnecessary, lacks parsley. for a better flavour peel prawns, cook shells in oil with garlic and chilli, strain oil, bobs yer uncle. use raw prawns they only take 30 secs to cook, ohh and cut the seedy bit from the courgette as it has naff taste
