Ingredients

  • aubergine, halved lengthways and cut into strips
  • courgette, cut into strips lengthways
  • 2 red peppers, cut into strips lengthways
  • 2 large tomatoes, cut into quarters
  • extra-virgin olive oil
  • ½ lime, juiced
  • 50g rocket
  • 4 smoked mackerel fillets, broken into large pieces

Method

  1. Heat a griddle (chargrill). Brush the vegetables lightly with oil and grill for 2 minutes each side until tender (do the tomatoes last as they will stick a little).
  2. Put the vegetables into a large bowl, season and toss with the lime juice, a little more olive oil and the rocket. Divide between four plates and serve with the smoked mackerel.

Grilled the mackerel and used frying spray on the vegetables to cut down on the amount of fat in this. Also grilled some onion and green peppers because we didn't have an aubergine.

Absolutely delicious. The line juice is a brilliant addition - wouldn't have thought of pairing lime with those particular vegetables.

Will definitely make again.

YUM! Loved this recipe - made it into a very big and full meal by adding some halved, boiled new potatoes and a mix of fat free fromage frais, horseradish cream and a dash of white wine vinegar (which cut through the oil of the chargrilled veg and mackerel). Tossed the potatoes and veg through the dressing, and poured over the flaked mackerel and rocket. A very fulfilling, simple, fresh, quick and easy meal.

Loved this recipe, it was really easy and super tasty. Will definitely do again. I oven roasted cherry tomatoes with a little olive oil and mixed herbs and then added them to the rest of the veggies, it tasted great! Served with a little rice to bulk it up but still a really healthy, scrummy dinner!

I am currently on a low carb diet (just cutting out the main carbs pasta,bread,potatoes etc) and this was perfect, healthy yet filling! I didnt use the lime as im not into citrus, either is my partner and instead of aubergine I used red onion. I tasted delicious!! It was also so easy to do, i have made it twice since. Highly recommended for those healthy food seekers!

Really tasty recipe, i also griddled a red onion quartered and used lemon juice instead of lime. Will def make this again, really quick and easy to prepare. Seems so simple but the flavours went really well together. YUMMY!!

My husband enjoyed this alot. There was a little too much oil for me. However it was a very tasty dish and quick to make.

this was nice healthy meal! i served it with some mini bruschetta's topped with roasted tomatoes, garlic, basil and plenty of olive oil, lovely!
