Baked feta & tomato with herb salad
Low in GI and vegetarian too, this salad will satisfy most tastebuds and is good for you too

Ready in 30 mins- Heat the oven to 200C/fan 180C/gas 6. Drizzle a little oil in the bottom of 2 small baking dishes, line with tomato, season then divide the feta on top. Top with the remaining tomato, season again and drizzle with oil.
- Sprinkle the oregano over and add the garlic. Cover with foil and bake for 20 minutes. Discard the garlic and serve with herb salad dressed with a little olive oil and balsamic, and crusty bread or sourdough.
