Baked feta & tomato with herb salad

Low in GI and vegetarian too, this salad will satisfy most tastebuds and is good for you too

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Drizzle a little oil in the bottom of 2 small baking dishes, line with tomato, season then divide the feta on top. Top with the remaining tomato, season again and drizzle with oil.
  2. Sprinkle the oregano over and add the garlic. Cover with foil and bake for 20 minutes. Discard the garlic and serve with herb salad dressed with a little olive oil and balsamic, and crusty bread or sourdough.

    A fab recepie with crusty bread to soak up the leftover juices! Easy to prepare. Have made it on more than one occasion and it is a hit each time!

    This is delicious! I used the beefsteak Jack Hawkins tomatoes, a drizzle of balsamic and some chopped black olives. Absolutely beautiful served with oven crisped wholemeal pitta strips. Will definitely making this quite a lot! Will make a lovely informal first course or light lunch or supper. I baked for longer than half an hour and cut the cheese quite thinly. Gorgeous!

    This is soooo good. I made it for a Sunday lunch on a very hot day with lots of crispy green salad and a large slice of some rustic bread. The tomatoes were not the best, but it still tasted great.
