Method

  1. Heat the oven to 180C/fan 160C/gas 4. Butter and base-line a 20cm-square baking tin with baking parchment. Gently melt chocolate and unsalted butter together in a bowl over hot water until smooth then cool a little.
  2. Whisk 6 whole eggs, 2 yolks and caster sugar together until pale. Fold the melted chocolate mix into the eggs. Sieve cocoa powder with plain flour then fold everything together until evenly mixed.
  3. Pour into the prepared tin and bake for 20 minutes until slightly risen at the edges. Allow to cool completely in the tin.
  4. Cut into 12 and indulge - you should have a thin crisp crust and a rich, gooey centre.

    I live in cyprus and alot of your reipes say us golden castor sugar . You can not buy this in cyprus so can i use plain cstor sugar .

    Olive really does have some great recipes, she must be a wonder cook! I made this for friends at work and for my family and everyone went mental over them. Each one is like a gooey, cakey, chocolatey, velvety melt-in-your mouth brown brick. I had a disaster making them though. The dish I used to melt the chocolate was too small so chocolate was leaking everywhere; then the tin I used wouldn't fit in the oven! But it was well worth persisting. These are luxury brownies that no one with decent taste buds will refuse!

    I was a bit disappointed with this recipe. Perhaps I didn't get it right, but thought I'd followed it exactly. Found the brownies a bit dry and so extravagently rich that could only have little bits at a time.

    Having been disappointed with brownie recipes in the past, I found this one worked wonderfully. The brownies are gooey, dark and richly chocolatey (just as they should be!), and while they look quite dense and heavy they actually melt in the mouth. I would say, however, that it is so rich you will easily get more than 12 portions. Definitely one that I'll be making again!

    Took at least three times the cooking time in my oven, and its a fan oven, but eventually, they turned out fantastic! Got 12 very generous sized portions - my partner and I couldn't get through them all, so he took the remainder into work - they went down a storm!

    Wonderful rich brownies, though they took just over half an hour to cook rather than 20 mins. Small portions work better with this level of richness - I'd say nearer 24 than 12. These will be getting made again - though I'll probably add cherries or similar next time.

    Made these for the first time this week, they were absolutely gorgeous. They did take more like 30 mins in the oven and I cut them into 24 pieces. Everyone loved them and have had to make 2 more lots today.

    Decadent and SUMPTUOUS.................mmmmmmmmmmmm. like other raters I cooked for slightly longer - 25 mins and they were slightly gooey on the inside - that just added to the whole sensuous gourmet experience!

    These are VERY rich, and even a small piece can be hard to eat. Next time, I'm going to use a less dark chocolat and make the brownies just a touch sweeter. Excellent with ice cream though, and really yummy.

    Really yummy, but I struggle to believe that the recipe is totally accurate. After the appointed cooking time, these brownies were more like a molten chocolate cake. It took about 12 more minutes before they could be considered done.

    Had a bit of a disaster with this recipe! the cake didnt cook in the middle and was still moussey in the middle after over an hour in the oven at 160(fan) when i eventually took it out it sank!! can anyone think how this may of happened, as i followed the recipe to the exact way it was supposed to of been done??

    Cut mine into about 36 squares which were much more realistic portion sizes for something this rich. I cooked mine for 30 mins and the middle section was still very gooey (not that anyone complained), but I think it could have done with a bit longer still.
