Method

  1. Heat the oven to 180C/fan 160C/gas 4. Butter and line the bases of 2 x 450g loaf tins with baking parchment. To make the streusel topping, rub the butter into the flour, then mix in the demerara sugar and chopped pecans. Melt the chocolate either in the microwave or in a small glass bowl set over a pan of barely simmering water. Stir until smooth and remove from the heat.
  2. Cream together the softened butter and caster sugar until pale and fluffy. Gradually add the egg, beating well between each addition. Sift together the flour, baking powder and cocoa and fold in using a large metal spoon. Add the mashed banana and chocolate and mix well.
  3. Divide the mixture between the 2 tins and top each with the streusel. Bake for about 45 minutes or until a skewer inserted in the middle comes out clean. Cool on a rack, then wrap in baking parchment or foil.

Easy to convert to gluten free just use dove self raising flour instead of wheat flour. Very moist and nobody guessed it was Gluten free. I cooked some of the mixture as muffins.

What a fab cake! Made it with my 3yr old son to use up over ripening bananas. Moist, very soft and light with a perfectly proportioned chocolate/banana flavour. They didn't rise as much as I thought and while they were cooling, I did consider putting the mixture in one tin next time. However now I've tried it, the slice size was just right. (Although I did have 2!) My son didn't mash the banana very much so pieces were visible, which didn't detract from the flavour, although next time I'll help smoosh them up a bit more so the slices look less like they have poorly combined mixture in them! Topped the cake with icing sugar - looked very pretty.

Yummy, easy cake. I made 1 big one instead of 2 smaller ones. I did the topping , it added a good contrasting texture. I used coffee sugar crystals instead of demerera and brazils instead of hazelnuts. I pressed on quite firmly and it stayed in place. Bigger loaf tin took about 70 mins to cook.

I know this is quite a variation on the recipe, but I just made a cupcake/muffin version of this because a) I don't have two loaf tins and b) I was feeling impatient and didn't want to wait for the longer cooking time of a loaf. The cupcakes are amazing! Even without any icing. I didn't bother with the streusel topping (as I said, impatient) and I didn't have any chocolate, so I just stuck with the cocoa in the recipe, omitted the melted chocolate and splashed in some milk to loosen up the mixture. It made 12 enormous cupcakes. They took about 20 minutes to cook on a low-medium heat. Brilliant!

Excellent cake. Didn't bother with the topping and cooked it in one large loaf tin for around an hour. It was very light but moist although I may have added less flour than suggested as I had to guess the weight as scales packed up mid-way. Definitely making this again.

I tried this recipe and it worked well. However I decided to add about a tablespoon of finely chopped pecans to the main part of the cake and I think it get it a better flavour.

I have never been good at baking cakes, but this one is so easy and delicious it makes me look so good :-) I bake it all in one tin, I use milk chocolate instead and 3 bananas. No topping, but I don't question that it might be worth the effort.. I just don't want to push my luck :-) Great Cake!!

This is really delicious. I made it in a springform as my loaf tin was packed away and it came out really moist. I used 100g of chocolate chips and just chucked them in with the bananas.
