Stir-fry vegetables with cashews

Method

  1. Heat 2 tbsp oil in a wok or large pan. Add the onion and cook for 2 minutes. Add the red pepper and mushrooms and cook for 3 minutes, stirring frequently. Add the pak choi and garlic, mix well and cook for 2 more minutes. Finally, add the cashew nuts, mix and serve with a drizzle of soy, sesame oil or chilli sauce if you like.

    Fresh and healthy dish, tasty served on its own. I added a finely chopped red chilli for some extra kick, and a used a slug of Ketchap instead of soy for a bit more sweetness.

    This was pretty tasty. We fried the vegetables in stir fry oil from tescos (which is good for stir frying all veg). First we fried the onion, garlic, some sliced spring onions and some chilli paste together for a couple of minutes. Then we added in all the veggies which we added peas, sliced carrots and sweetcorn too also. We added soy sauce to the veg mixture and some oyster sauce. Delish and a nice healthy meal with some basmati rice or noodles.

    Great combination of vegetables and quite tasty in its own right (without soy sauce), although I think I'll pick some smaller pak soi's next time as it was a little too much. Perhaps I shouldn't have gobbled up the remainder of the cashews before dishing up though! This one will appear in future in our household, but only on rare occasions. I simply cannot be trusted with cashews around!

    I enjoyed this, although I used sesame oil instead of the veg oil, with a splash of dark soy at the end. I would probably use baby pak choi next time instead of its grown up form.

    Loved by all! I added some extra veg and served with noodles and rice. I also cooked some chicken with garlic in another pan. All family members happy, just increase the quantity next time! Kids loved to eat with chop sticks.

    Lovely! Added a chopped chilli and a bit of chopped brocolli that I had spare in the fridge. Really tasty and will be cooking it again!
