Cheesy broccoli pasta bake

Whip up this cheap, simple and satisfying meal in just 30 minutes

Method

  1. Cook the pasta, adding the broccoli for the final 4-5 mins and cooking until tender. Drain well, then heat the grill.
  2. Heat the butter in a saucepan and stir in the flour. Cook for 1 min, then gradually add the milk, stirring well between each addition. Bring to the boil, stirring, then simmer for 2 mins, before stirring in the mustard, half the cheese and seasoning.
  3. Mix the pasta and broccoli into the sauce and spoon into an ovenproof dish. Scatter over the remaining cheese and place under a hot grill for 3-4 mins until golden and bubbling.

Swiss-style macaroni cauliflower cheese

Simply swap the penne for macaroni, the broccoli for cauliflower and the cheddar for Gruyère, and cook as before.

    Found it a little too mustardy so would reduce to a teaspoon next time. I added green chilli and garlic plus some Parmesan. Very tasty dish and would make again.

    Loved this! Added half an onion and 2 cloves of garlic, fried them and added them in the cheese mix at the same as the brocolli. Also added some green beans too. Brilliant!

    Really great twist on a macaroni cheese! The mustard addition is fab - was much easier to make the sauce. Of course I added some bacon to the mix, but at least I had my veg too ;)

    Worked out very well. I sautéed a small finely chopped onion and added some diced lean bacon to the mix. Make a nice quick lunchtime meal for two. I halved the ingredients.
