Raspberry & milk chocolate cheesecake

Use good quality chocolate for this sumptuous cheesecake. Raspberries not in season? Just leave them out

Method

  1. Crumble the digestives in a food processor, add the melted butter and mix well. Place in a 20cm flan ring with a push-up base and pat down with the back of a spoon. Melt the chocolate in a microwave or a glass bowl set over a pan of simmering water. Mix the cream cheese, cream and sugar together until smooth. Add the raspberries and stir in, then add the melted chocolate and quickly swirl through. Spoon into the flan ring and smooth the top with a palette knife, then place in the fridge and chill for 2 hours. Serve dusted with icing sugar and a little melted chocolate if you like.

Who doesn't love cheesecake? Use good-quality chocolate like Green & Black's, after all it is for you, too. Leave the raspberries out if you want to make this at other times of the year.

    Great recipe - I've used it three times now and it's always a hit! Never had any problems with it setting, Although runny at first, the mixture soon thickens up if you give it a good old stir! Decorated the top with melted white choc and left over raspberries! Yummy!

    Very easy to make but best of all it was very good. I botched melting the chocolate so I used Nutella instead and substituted the cream cheese with mascarpone. Although the cheesecake wasn't fully set when dessert time came around, my husband and I had no problems eating and fully enjoying this yummy dessert; we had the next morning to look forward to as by then it had set and we each had a slice. Will definitely make this again.

    This was quick and easy but I didn't drizzle any chocolate over and I think that and a few extra rasperries on top would have given it a bit more oomph.

    Delicious! very easy to make and was the best cheesecake I have ever tasted! Will definitely make again. Served with melted chocolate as suggested and also a chilled raspberry coulis! Very nice!

    This really is so simple and yet so delicious, the richness is really compensated for by the fruitiness of the raspberries, I used some icing sugar in the cheesecake mix too and baked the crust for about 12 mins.

    I doubled up the quantities as it says it's only for 4 people but then was able to to get 12 generous portions from it! Quite sweet but delicious!

    Delicious - I used raspberries and strawberries and used them for decoration too. Nestle 'Milkybar' - tastes fab in this recipe, after I used this, no other white chocolate brand could match.
