Raspberry & milk chocolate cheesecake

Use good quality chocolate for this sumptuous cheesecake. Raspberries not in season? Just leave them out

Method

  1. Crumble the digestives in a food processor, add the melted butter and mix well. Place in a 20cm flan ring with a push-up base and pat down with the back of a spoon. Melt the chocolate in a microwave or a glass bowl set over a pan of simmering water. Mix the cream cheese, cream and sugar together until smooth. Add the raspberries and stir in, then add the melted chocolate and quickly swirl through. Spoon into the flan ring and smooth the top with a palette knife, then place in the fridge and chill for 2 hours. Serve dusted with icing sugar and a little melted chocolate if you like.

    I whipped the cream and used chocolate philadelphia. I removed chocolate from the recipe and reduced the sugar by half I would recommend tasting it to determine how sweet you would like it. Turned out quite well.

    I made this for a celebration meal for my neice and everyone loved it,she even put a photo on facebook! I used strawberries as i didnt have raspberries. The flavour was very fresh. I did do a couple of tweeks........you need to whip the cheese and sugar to a smooth consistancy, whip the cream and combine. This is not clear in the method, but worked well for me. I also just swirled the chocolate on top as others seem to struggle, and i thought trying to combine it may turn into a big brown goo! I Put strawberries on top and the presentation was lovely. Will make again........yum.

    This was really easy to make and is sat in my fridge calling to me but I can't touch it until tomorrow evening! I replaced full fat cream cheese with the light version and may replace the cream with creme fraiche next time as a lighter option. I also used frozen raspberries and may use flakes next time instead of melted chocolate as the process of melting was rather a faff! So looking forward to eating it tomorrow evening! Drool!

    The recipe nor the picture doesn't actually tell you how this cheesecake should turn out but I thought I'd give it a go based on all the fantastic reviews! I used 75g of icing sugar as this wasn't clear on the recipe and whisked this with the cream cheese. In a separate bowl I whisked the cream and vanilla. I melted 50/50 milk and dark chocolate and let this cool slightly. I also baked the biscuit base for 10 minutes to help it set. I then combined the cheese and cream mixtures before adding 200g raspberries....my mixture went completely pink because I used more raspberries than the recipe suggested plus I wanted to incorporate them into every mouthful. I then quickly added the chocolate. What happens is the chocolate forms into tiny solid chunks throughout. I'm not sure how the top layer of chocolate on the picture was formed but mine didn't need anything extra. This cheesecake was absolutely scrummy and I would highly recommend making!!

    I have tried this receipe a lot of times and most of the time it worked and was really quick, easy and tasty. We exchanged the raspberries for broken crunchies which is gorgeous. But a couple of times when i made it the mixture didnt thicken and was liquidy!!! any ideas what I did wrong and why this happens?

    Nowhere near as good as a baked cheesecake. It just tasted like sweetened cheese. It works but doesn't taste great.

    What is the point of using a low fat cheese when you have 200ml of double cream in the recipe!!!! I made this for a birthday for my sister and everyone loved it.!! Very easy

    I make this cheesecake so many times, generally as a basic cheesecake recipe and dont add choc (hardly any of us like chocolate!) but other items such as strawberries, little melted compote running through, lemon sometimes etc etc..its so easy and comes out brilliantly every time. My partners most fav dessert!

    This cheesecake is perfect! It's so easy to make and really delicious. I always put a few raspberries on the base before adding the topping. It keeps them whole. On the top, drizzle melted chocolate and crumble extra raspberries - looks great.
