Raspberry & milk chocolate cheesecake

Use good quality chocolate for this sumptuous cheesecake. Raspberries not in season? Just leave them out

Method

  1. Crumble the digestives in a food processor, add the melted butter and mix well. Place in a 20cm flan ring with a push-up base and pat down with the back of a spoon. Melt the chocolate in a microwave or a glass bowl set over a pan of simmering water. Mix the cream cheese, cream and sugar together until smooth. Add the raspberries and stir in, then add the melted chocolate and quickly swirl through. Spoon into the flan ring and smooth the top with a palette knife, then place in the fridge and chill for 2 hours. Serve dusted with icing sugar and a little melted chocolate if you like.

    Fantastic cheesecake and so simple to make, I changed the milk chocolate to white chocolate which worked well. The only problem is people keeping asking me to make this for them!

    I've had a lot of fun (and calories ;( ) with this recipe over the summer. I've made the cheesecake several times using raspberries, blueberries and the children's favourite was surprisingly blackberries. On each occasion I also added a cap full of brandy to posh it up a bit!

    I have used this recipe many many times, even changed it by substituting strawberries and white choc instead of raspberries and milk chocolate, its amazing and everyone loves it!

    I made this for a birthday dinner. I couldn't get raspberries but I had some small alpine strawberries in a container on the patio. I also used choc chip cookies for the base, because I had them in. It was so delicious and SO EASY. A winner.

    i love this cheesecake, it looks so pretty,iv tried a few others from this website but this is definatly the best one..i have to say i added some more double cream,sugar and soft cheese because we like our cheesecake with a thicker top and same with the base, i added some extra to make it just a little thicker.

    easy to make i let it chill overnight in fridge and was not disappointed and neither were my sunday dinner guests ! i never bothered melting choc over it for finishing touch i was happy enough even though never looked like picture ! more a browny pink - must have mixed choc through too much but still yummy

    Made this for a family birthday..... it was absolutely GORGEOUS!!!!!! definetly worth doing!!!! i also added some flour to mixture as didnt feel it was thick enough.... will certainly be making this again though :)

    I bake the base for 10 mins to make it crunchier, and add frozen raspberries to the cream cheese mixture so that when I add the chocolate it hardens into lumpy swirls which is just delish!

    Made this for desert tonight. I was really impressed with how easy it was to make and how little time it took. I used Ginger Biscuits for the base to add a bit more flavour...Lovely!

    Really nice cheesecake and so easy to make, when adding the chocolate i allowed it to cool down and then drizzled it in a bit at a time mixing after each drizzle and it stayed cheesecake coloured with flecks of chocolate, will make again

    I've made this five or six times now always with excellent results until Christmas Eve when it went really wrong! I think the chocolate must have been too warm when I swirled it through. The chocolate clumped and sank and the cheescake just didn't set at all. A real shame but I couldn't serve it at all as it remained like milk. My fault entirely!
