Watercress & chicken stir-fry

Forget packet sauces, this will give you a real taste of the orient.

Method

  1. To make the sauce, mix all the ingredients together in a small bowl until completely blended. Heat the oil in a frying pan until very hot. Throw in the chicken, cashew nuts, pepper and onion, then stir-fry for about 4-5 mins until the chicken is cooked and the nuts are toasted. Pour over the sauce and simmer with a splash of water. Remove the pan from the heat, then stir through the watercress just before serving with boiled rice.

Watercress Vs Chinese greens

Stir the watercress through right at the last moment so it only wilts slightly and keeps its crunch. Chinese greens can be hard to find and are often expensive, so watercress makes an ideal alternative, plus it actually has more flavour.

    Dont bother with Chineese takeaways. This is healthier and much tastier! Really quick and easy. Used same recipe for 2 but with less watercress and cashews (100g watercress and 50g cashews) Served on top of fresh egg noodles. loved it!

    Had this for supper last night and it was delicious! The flavours were lovely and the cashews were definitely the stars of the show, giving a lovely crunchy texture. Made it exactly as the recipe except for the watercress which I couldn't get so used rocket leaves and it worked a treat. Served it with basmati rice - gorgeous! I'll definitely be making this again and again.

    Lovely! definitely worth making the sauce properly as it was really nice and it was more filling then we expected. We used chicken thigh fillets which are a bit cheaper and still worked well. We will certainly be making it again.

    Quick and very tasty. Changed the ingredients a little to fit with what was in the store cupboard - used char siu sauce, carrots, half the watercress. Served with brown rice. Will make this again - with the right sauce!

    The only reason I tried this recipe was I had a big bag of watercress that needed to be used up, so I searched for recipes using it, what a lucky find, 25 minutes from start of prep to the table and a tasty filling meal, full of lovely textures, who needs a takeaway when you can whip something like this up in minutes!! Will definitely do again and again!!

  • 2 tbsp soy sauce
  • 1 large knob of fresh root ginger , peeled and finely grated
  • 2 garlic cloves , crushed
  • 1 tbsp sesame oil
  • 2 tbsp rice vinegar or white wine vinegar
