Lamb chops with lemon & parsley

Method

  1. Heat the grill to high, put the chops on the grill pan and cook for 5 minutes on each side for pink and 10 minutes on each side for well done.
  2. Meanwhile, put the lemon zest and juice in a bowl and add the parsley and garlic. Add 1 tbsp olive oil and a little seasoning. Remove the chops from the grill and serve with the lemon and parsley mixture on the side.

    This is really easy and is a good one to impress. Goes very well with Gratin of carrots & root vegetables (as suggested). Recipe misses out the Garlic in ingredients. I used one clove, crushed which doesn't over power the lemon. Try not to make the lemon and parsley too water, but just enough to give a zing and cut nicely through the lamb.

    Could really taste the lemon! I cooked the lamb with the lemon instead of adding it after and served with mash, gravy and roasted veg!
