Rosemary and potatoes are a match made in vegie-patch heaven - these are great served both hot and cold.

Method

  1. Heat the oven to 200C/fan 180C/gas 6. Put the potatoes and rosemary in a roasting tin and toss in 3-4 tbsp olive oil. Roast for 40 minutes until tender and crisp. Season with sea salt, black pepper and a little balsamic vinegar.

    These are lovely, but if your like my husband and love traditional roast potatoes you may be a bit dissapointed... I may try this recipe using maris piper potatoes next time.

    Definitely worth sticking the spuds in the microwave for 8 minutes or so before roasting them, just to soften up the insides a bit.

    I do these all the time! Definately par boil first, then also add some garlic to them when roasting!!

    Cooked these twice over the weekend - each time I added some grated garlic (and missed out the balsamic vinegar as hubby isn't a great fan). They were delicious!

    Delicious and very simple. I took others' suggestions and par boiled the potatoes before roasting, I also added some chopped garlic to them for the last 10 mins. A good alternative to roasties on a weeknight.

    Potatoes took longer than 45 minutes for me, I ended up leaving them in an hour. Very nice though!

    Just lovely! Definitely par boil first, then toss in a little infused garlic oil, and bake for about 30 minutes, or till quite soft inside but crisp on outside. Toss in a little balsamic and seasoning and serve! Delicious!
