1. Heat the oven to 200C/fan 180C/gas 6. Put the potatoes and rosemary in a roasting tin and toss in 3-4 tbsp olive oil. Roast for 40 minutes until tender and crisp. Season with sea salt, black pepper and a little balsamic vinegar.

  These are lovely, but if your like my husband and love traditional roast potatoes you may be a bit dissapointed... I may try this recipe using maris piper potatoes next time.

  Definitely worth sticking the spuds in the microwave for 8 minutes or so before roasting them, just to soften up the insides a bit.

  I agree with Janine, i par boiled these first before i roasted them and they were lovely. Made them for the parents in law, delicious!

  I do these all the time! Definately par boil first, then also add some garlic to them when roasting!!
