Method

  1. Sift the flour into a bowl with a pinch of salt and make a well in the centre. Drop in the egg yolks and the oil. Mix to a smooth batter with the milk and beat well. Cover and stand in a cool place for 30 minutes.
  2. Meanwhile, slice the onions into rings about 1cm wide. Put the groundnut oil in a pan no more than 1/ 3 full and heat to 190C. Whisk the egg white until stiff and fold into the batter. Then dip the onion rings into the batter in batches and fry until golden brown - this should take 3-4 minutes. Serve immediately.

    Surprisingly, these worked really well. However I would recommend consuming something to cleanse the palate afterwards (i.e. a nectarine) as the proceedure can be a little oily/greasy.

    Excellent recipe and so easy to make. I only used one onion as there was only two of us eating them. With the left over batter I melted some butter in a saucepan with some crushed garlic and heated some mushrooms with it then let them cool down and sit in the butter before covering them with batter and frying... lovely!!

    I made these onion rings when we had a slap up burger and chips with sides one Saturday night in front of the TV. My hubby said "Light, delicious and possibly the best onion rings he has ever had". Love 'em :)

    I think I must have done something wrong because these were a total disaster, really soggy, I think I mustn't have had the oil hot enough.

    As usual i went into supermarket to buy frozen ones came out without and had a stroppy partner as that was only thing he wanted!!! So i googled found this had the ingredients in and reluctantly made them. Wow it worked and hubby said they tasted fresher than shop bought (thats a big compliment!!!). Thankyou for saving my inability to be swaided from offers and shiney things in supermarket ha!!!!!!
