Diner-style pancakes with bacon and apples

These American-style pancakes are easy to whip up even when bleary-eyed and morning-after-ish, or simply make the mixture the day before if you like

Method

  1. Put the egg, milk, sugar, flour, 2 tbsp melted butter and 1/2 tsp of salt in a blender and whizz until smooth, or use a hand whisk. Ideally, let the mixture stand for an hour or overnight, although you can use it straight away.
  2. Fry the apple in a little butter until softened and golden. Keep warm. Heat a non-stick frying pan, melt a knob of butter, and drop in tablespoonfuls of pancake mixture. When bubbles rise to the surface of the pancakes and burst, turn them over and cook for a minute or so longer. Keep warm in a low oven while you make the rest. Layer the pancakes with the bacon and apples, drizzle with maple syrup and serve with sour cream or crème fraîche.

    Moist, delicious and easy to prepare. I make extra pancake mixture and keep it in the fridge for a quick snack or meal.

    Easy peasy and yummy. Rustled them up speedily for kids supper. Didn't do the topping here (but will try for a grown up treat.) Used cream cheese, peanut butter, marmite etc.

    When I served these up to my husband for his tea after a day at work I wondered what he'd think about me giving him pancakes, but i'm glad I took the chance as he loved them so much I made them the next week and will again. I love them too with the bacon, apple and maple syrup but my 8 year old daughter would eat these pancakes anytime of day with just a sprinkling of sugar.

    Made this for my son's breakfast and he practically licked the plate clean! I would suggest choosing a soft variety of apple though. We used Gala and they took a long time to soften.
