Seared beef with rocket and Parmesan

Method

  1. Heat a griddle or frying pan until smoking hot and cook the steaks - 2 minutes per side for rare, 3 for medium. Leave to rest for 5 minutes.
  2. Meanwhile, make the dressing by whisking together 3 tbsp oil, the vinegar and mustard with some seasoning. Slice the steak into strips and toss together with the rocket, tomatoes and dressing. Top with some Parmesan shavings.
