Strawberry & white chocolate cheesecake

A fruity cheesecake with whirls of white chocolate that looks almost too pretty to eat

Method

  1. Put the shortbread biscuits in a plastic bag and bash with a rolling pin until they resemble breadcrumbs. Mix the biscuit crumbs together with the softened butter and press firmly onto the base and sides of a 20cm springform tin. Refrigerate until needed. Melt the white chocolate in a bowl in the microwave and set aside until needed.
  2. Beat together the cream cheese and fromage frais until smooth and thick. Add the strawberries to the cheese mixture with the melted white chocolate and mix. Spoon the cheesecake filling into the biscuit case. Level the top and chill for about 4 hours until set.

    Made this at the weekend - really easy. Like others, I substituted the fromage frais for marscapone which worked brilliantly. Can't fault this one. I had the remainder for breakfast!

    This cheesecake is to die for! I didn't bother putting biscuit base up sides of tin as there didn't seem to be enough of it for that and it was a bit fiddly. Didn't have any leakage (as was mentioned in previous comments) but I did pour off excess liquid that had gathered in cream cheese tub, before mixing it with the other ingredients. Very, very tasty. I will definitely be making this again.

    Made this cheesecake for a suprise party I went to. Was the best I've ever had if I do say so myself. It was really light and the chunks of strawberries were really refreshing. Only put the biscuit crumbs on the base. Made it a second time for my birthday (which is tommorow), I'm hoping it'll still taste just as good as the first time. Recomend to everyone as a simple yet yummy desert to make for any occasion.

    I've made this once last summer (just over a year ago - after I went strawberry picking!) and it worked great :). In fact, I'll be making it again tonight for a 'come dine with me' style dinner party - nice to have something you can make in advance. I also used mascarpone as someone suggested, I think that's the secret to avoiding sogginess. I have a weird memory of lemon juice being added the first time around to help it set, but I really can't remember now!

    Hi This recipe is amazing and it never fails! Totally delicious. I'm having a dinner party on Thursday and plan to serve this up as desert. Does anyone have any ideas as to what it could be served with? I was thinking cream or ice cream, but I don't want it to detract from this beautiful cheesecake! Any suggestions welcomed!     I made this the other day, and although the filling was yummy, not too impressed! I took away 100g of soft cheese and replaced it with strawberry yoghurt instead, as I wanted to focus more on the strawberry- I have to say this worked brilliantly! The effect of the white chocolate blocks was yummy, however I was very disappointed with the base- it was impossible to cut into! This cause the presentation of the cheesecake to not to the taste justice and the filling had to be taken out first in order for the shortbread base to be hacked in to!

    This recipe has been in my binder for a while as I didn't have a springform tin and this weekend we decided to get one and try it out. Oh my goodness it was amazing! It's lasted a while as there's only two of us eating it and it does make a lot. It's moorish and the strawberries really taste sweet. Will definitely be making this again!

    The first time I made this recipe, it was a disaster. I made it in a hurry and didn't realise it took 4 hours to set; it was v lumpy too but that was my inability as a baker. I made it again to take to a friend's party and it was a roaring success. It was kept in the fridge in the baking tin 'til it was needed. To get the biscuit up the sides, I really pressed the mixture in using the back of a spoon as it smooths out from the centre to the sides it thickens at the edge and you can draw that up the sides. I'll definitely be making it again.

    Yum yum! I saw this receipe last week on Thursday and thought, I will make this for the weekend. Well, it almost did not see the end of Friday. I could not find fromage frais, so I googled a substitute and a site told me to mix equal parts of cottage cheese and yoghurt. The result was so yum! Strawberries are not in season here in South Africa right now, but thank goodness for the global village, now quite a few retailers dio import, so the ones I found were delectable. Will certainly make this again.
