Strawberry & white chocolate cheesecake

A fruity cheesecake with whirls of white chocolate that looks almost too pretty to eat

Method

  1. Put the shortbread biscuits in a plastic bag and bash with a rolling pin until they resemble breadcrumbs. Mix the biscuit crumbs together with the softened butter and press firmly onto the base and sides of a 20cm springform tin. Refrigerate until needed. Melt the white chocolate in a bowl in the microwave and set aside until needed.
  2. Beat together the cream cheese and fromage frais until smooth and thick. Add the strawberries to the cheese mixture with the melted white chocolate and mix. Spoon the cheesecake filling into the biscuit case. Level the top and chill for about 4 hours until set.

    This is my new pudding to impress! It's lovely, and easy! I use mascarpone. I have done it with straw and white choc and also rasp and dark choc its lovely both ways!! Class recipe.x

    This is to die for!! Only problem was there was a bit left in the fridge overnight and the juice came out of the strawberries and made the base a bit soggy. I'll know to finish it next time!

    I followed the recipe to the letter but this was a total disaster. The cheesecake didn't set at all despite being left in the fridge overnight and it tasted horrible. Very disappointed and will not be making this again.

    I have made this cheesecake 3 times now and have always came out looking really good and tasts lovely, very good for a summer dinner party desert. Only thing is, is it tasts better with an extra 100g of chocolate.

    Never fails every time! I've made it with strawberries, raspberries, blueberries and a summer fruit mixture. It goes dont well both at home and at work. It cant be much easier to make!!! I've tried mashing half of the fruit and adding that for colour and that works too.

    I'm know as the cheesecake queen - sadly this one didn't do much for my reputation thanks to the supermarket! They only had the low fat fromage frais which was too watery so the mixure wouldn't thicken and curdled a little. I left it it the fridge for over a day and it wouldn't set properly and started leaking out the sides almost straight away! Disaster!! I'm sure it would have been lovely if I'd used full fat fromage frais - I'll know for next time!!

    Absolutely gorgeous - went down a storm. It's not a firm cheesecake as there's no setting agent but it wasn't any worse for that. Definitely not enough biscuit mixture to do the sides and I can imagine that being tricky as it's quite a dry mix, was lovely using the shortbread though. Highly recommended!

    Hi, I made this today with my two boys (2&4) for father's day and everyone loved it. Used mascapone instead of fromage frais and didn't put the crust up the side either, very easy and quick, will def make again and try some different combinations. Used green and blacks white chocolate too, very yummy : )

    Lovely cheesecake. I especially like the shortbread base as a bit of a change. Mash up the Strawberries before you add them to the cheeses to get the pink effect in the picture.

    I have made this twice now with 300g Mascarpone, 250g fat Free Fromage Frais and fresh raspberries. Both times excellent results if kept well chilled. I sieved some of the raspberries to get a nice pink colour and the rest I left whole and folded in carefully so as not to break up. Also worked well with white Toblerone. Very popular with guests - good for vegetarians who don't eat gelatine people who areallergic to eggs.

  • 175g shortbread biscuits, for extra flavour, try using lemon or ginger shortbread biscuits
  • 50g unsalted butter , softened
  • 200g melted white chocolate
  • 300g full fat or medium fat soft cream cheese
  • 200g fromage frais
  • 225g strawberries , roughly chopped
