Mangetout & chilli oil noodle stir-fry

A vegetarian stir-fry with a bit of bite thanks to the crunch of the cabbage and mangetout

Method

  1. Heat a large wok on high heat and add the chilli oil and egg noodles.Stir-fry for 1 minute. Add the hoisin sauce, cabbage, mangetout and a little water and stir-fry for 1-2 minutes until the vegetables are tender.
  2. Remove wok from heat and toss through the black pepper, spring onion and sesame seeds. Serve immediately.

    It was very tasty, although I added grilled prawns, which added flavour.

  • 1 tbsp chillies oil (widely available)
  • 400g egg noodles , cooked according to packet instructions
  • 1 tbsp hoisin sauce
  • small Chinese cabbage , finely shredded
  • 150g mange tout , trimmed
  • 1 tsp black pepper , freshly ground
  • 4 spring onions , thinly-sliced diagonally
  • 2 tbsp sesame seeds , toasted
