Courgette fritters with tomato & feta salsa

A wonderfully fresh, light summer dish, great for using up homegrown courgettes

Method

  1. Mix the courgette, onion, spices, flour and egg together. Season. Heat 1 tbsp oil in a non-stick frying pan, drop in heaped tbsps of batter. Cook, in batches, for 2-3 minutes each side or until golden and cooked through. Serve with the tomato and feta salsa.

    Fantastic recipe - I only substituted the flour with wholewheat alternative - it turned out very tasty... for seasoning I used 1 crushed veg stock cube: that added so much flavor!

    An excellent idea for a healthy meal or snack. I added a splash of soy sauce and used an onion chutney on the side with salad. A fresh flavoursome recipe. One I will use a lot in the future.

    I had a courgette night in (the fun we have at our house) and put together a few courgette dishes. I really liked this, the salsa went well. I thought there was a little something missing, I then realised I didn't put the chilli in. I might tinker around with some spices to see if I can add something to it in the future. Nice as it is though. Good way to get kids eating batter, and some veg as well.

    Have been making these since the recipe first appeared. Absolutely delicious and foolproof....have worked anywhere I have lived. Great as a starter, even as a side dish Have also made mini ones with a salsa topping as a substantial nibble with drinks.

    Really lovely! I have used ground cumin instead of seeds (about 3 teaspoons) and have seasoned it well with salt and some black pepper. I have only used 1 large egg ( my husband dosn't like eggs) and it was fine. They taste great with feta. I also made an extra spicy batch and this was nice with tzatziki. Perfect for lunch, picnic or served as a starter. Will definately making them again :).

    Made these last night as a starter to a 3 course meal. Ridiculously easy, the only hard part was that my arm got tired from grating the courgettes! Served with tzatziki, which was delicious.

    Made these with my student son who loves cooking. They were great but I should have squeezed out the courgettes more carefully like others suggested. Next time I will add more seasoning. We loved the mint in the salsa - really delicious!

    Quite Nice! Really quick, easy and cheap to make. I added some garlic powder for a bit of extra flavour. I'm tempted to try with aubergine next. Yummy :-)

    Great recipe! Really simple - I made the fritters using spray oil to fry with, and egg whites instead of whole eggs (simply because I had egg whites left over), and they still turned out absolutely delicious. Very healthy too! I would also agree with the user who sang their praises as a cold lunch - it's as good as something you'd buy at a deli.

    Made these today. Were very nice. Halved the ingredients as there's only 2 of us. Didn't have red onion so used white, no chilli, so used 1/4 tsp chilli powder.Recipe didn't state whether to crush the cumin seeds, so did just in case with pestle & mortar. Had been given massive courgette from friends allotment, so wasn't sure how much to use, so grated 200g which seemed to be ok. Did as suggested and squeezed the water out of the courgette first which seemed to work. Didn't make the salsa, as couldn't be bothered even though i had all the ingredients! Think the salsa would have been nice so will make next time! Would make again definitely.

    I'm not sure what everyone's raving about here. I made them like it said in the recipe, except I squeezed the water out of the courgettes but I didn't like them at all. They were bland and had a horrible soggy texture. I fried them then put them in the oven hoping they might crisp up but no luck. Definitely won't be making again

  • 1 large red chilli , finely chopped
  • 125g self-raising flour
  • ½ red onion , peeled and finely chopped
  • 2 large eggs
  • 1 tsp cumin seeds
  • 125g cherry tomatoes , quartered and mixed with 100g crumbled feta, a handful of mint leaves and the juice of ½ a lemon
  • 3 medium courgettes , grated
