Courgette & caper salad

Capers add flavour and interest to this classic Continental salad

Method

  1. Toss the courgette strips with the oil, lemon zest and juice, garlic and some seasoning. Set aside for 30 minutes or overnight to marinate. Divide between 4 plates and top with capers, cheese and rocket. Drizzle any extra dressing over.

    This went down a treat with my friends. I needed to use up leftover courgette so was perfect. I made it even more summery with broad beans and peas. The garlic is a little strong so I would leave out next time.
