Courgette & caper salad
Capers add flavour and interest to this classic Continental salad

Preperation and cooking times
Ready in 20 mins- Toss the courgette strips with the oil, lemon zest and juice, garlic and some seasoning. Set aside for 30 minutes or overnight to marinate. Divide between 4 plates and top with capers, cheese and rocket. Drizzle any extra dressing over.
