Red onion & Serrano ham tart
A gorgeous tart that tastes as good as it looks

Ready in 40 mins- Heat 1 tbsp oil and a large knob of butter in a large frying pan. Add the spring onions, vinegar and sugar and cook for 1 minute, turning them once. Set aside.
- Heat the oven to 180C/fan 160C/gas 4 and put a baking sheet in the oven. Lightly oil another baking sheet and unroll the puff pastry on to the sheet. Using a sharp knife, score a line all round the pastry, 1.5cm from the edge.
- Lay the ham within the line and put the spring onions on top in 2 rows (you may have to trim to fit). Season well. Brush the pastry border with egg, then fold the edges in to meet the scored line. Brush the new border with egg.
- Put the baking sheet on top of the one already in the oven and bake for 30 minutes until golden brown.

- 1 tsp caster sugar
- 375g ready-rolled puff pastry
- 8 slices serrano ham
- 1 egg , beaten with a splash of water
