Linguine with purple sprouting broccoli, sesame & chilli
A lovely spring-time supper idea - serve it with a chilled Prosecco to make a midweek meal more special

- Cook the linguine following the packet instructions. Meanwhile heat a little oil in a frying pan and add the purple sprouting broccoli, cook for 4 minutes then add the chilli and garlic. Fry everything together, stirring so that nothing sticks and burns, until the broccoli is cooked through. Stir in the sesame seeds and brown them briefly. Add the parsley and lemon juice and toss through the linguine with plenty of seasoning.
GI Assessment
Linguine, like other pasta, sits well within the low-Gi rating. However, it will make your blood sugar soar if you overdo your portion size, as the glycaemic load will go up. Try to spread this among three people if you can and you'll do yourself a favour if you add more broccoli, a fab low-Gi food.

- 2 red bird's eye chillies , cut in half

- 1 lemon , juiced
