Cumin lamb fillet with cauliflower crush

Cauliflower is a great low-GI food, and works well with this spicy lamb recipe

Method

  1. Mix the cumin, garlic and chilli and rub all over the lamb.
  2. Cook the cauliflower in simmering water until it is tender and drain very well. Crush roughly with a knob of butter and season well.
  3. Meanwhile heat a little oil in a frying pan and cook the lamb on all sides until it is browned and feels firm to the touch. Leave for a couple of minutes then slice and serve on the cauliflower with any juices poured over.

The GI lowdown

Lamb is a protein food so it won't have an effect on your blood sugar. The cauliflower is a great low-Gi food. This would go really well with steamed basmati rice - one of the best varieties when you're thinking about Gi.
