  • 40g bag tortilla chips
  • 4 skinless chicken breasts
  • 200g tub spicy tomato salsa
  • 142ml pot soured cream
  • handful grated mature cheddar

Method

  1. Heat oven to 200C/fan 180C/gas 6. Crush the tortilla chips. Put the chicken breasts on a non-stick baking tray, season, then slash each 3 times with a knife. Spoon 1 tbsp of salsa on top of each, then 1 tbsp soured cream.
  2. Sprinkle the chips over the chicken, then the cheese. Roast for 15-20 mins until the topping is golden and melting.

Great Monday night dinner, really tasty and suprisingly healthy, used reduced fat sour cream, still good. Served with green salad and some roasted peppers.

WOW...fantastic and so easy, but so tasty. Served with vegetable rice, but think I'll try it with the wedges and salad next time. Will make again and again and again...

A really great dish. I cooked this for my family and they loved it! I wrapped parma ham around mine to give my family their red meat fix! It really gave the chicken a nice taste. Will def be making this again!

I recommend this recipe as its is loved by everybody I have
cooked it for. I serve it with wedges and sweetcorn which
goes very well with it.

Did this recipe for tea yesterday...it was the tortillas that attracted me!

I did halve the chicken breasts to begin with to make them flatter and cooked them in garlic before adding the toppings and putting them in the oven to bake. From previous experience this seems to make the chicken much juicier and not so dried out tasting. I loved the combination of salsa, sour cream, crunch and cheese...delicious and so easy. Recommend 100% and am doing this again for tea tomorrow night...just to use up the rest of the salsa and sour cream of course! I served with some chopped salad and vegetable rice.

My fussy 9 year old son helped me to make these which encouraged him to eat them all up afterwards!
