Chicken nacho grills

A fun way to serve chicken breasts and keep kids interested - why not get them to help?

Method

  1. Heat oven to 200C/fan 180C/gas 6. Crush the tortilla chips. Put the chicken breasts on a non-stick baking tray, season, then slash each 3 times with a knife. Spoon 1 tbsp of salsa on top of each, then 1 tbsp soured cream.
  2. Sprinkle the chips over the chicken, then the cheese. Roast for 15-20 mins until the topping is golden and melting.

Using tacos

Spicy chicken tacos: Cube the chicken, then fry for 5 mins until golden. Toss with salsa and stuff into warmed taco shells. Dollop on soured cream and sprinkle with cheese and shredded lettuce.

Slashing the chicken

Slashing the chicken helps the topping to stay on and also allows the heat to penetrate the chicken more quickly.

    My fussy 9 year old son helped me to make these which encouraged him to eat them all up afterwards! Great family recipe as me and my hubby had some Jalapenos on ours too to give them an extra kick!

    Did this recipe for tea yesterday...it was the tortillas that attracted me! I did halve the chicken breasts to begin with to make them flatter and cooked them in garlic before adding the toppings and putting them in the oven to bake. From previous experience this seems to make the chicken much juicier and not so dried out tasting. I loved the combination of salsa, sour cream, crunch and cheese...delicious and so easy. Recommend 100% and am doing this again for tea tomorrow night...just to use up the rest of the salsa and sour cream of course! I served with some chopped salad and vegetable rice.

    A really great dish. I cooked this for my family and they loved it! I wrapped parma ham around mine to give my family their red meat fix! It really gave the chicken a nice taste. Will def be making this again!
