Lamb steaks with rosemary sweet potatoes

This is great to have up your sleeve, impressive enough for a dinner party and quick enough for after work

Method

  1. Heat oven to 220C/fan 200C/gas 7. Heat half the oil in a roasting tray, then brown the steaks on both sides and set aside. Toss the potato, onion, remaining oil and half the rosemary into the roasting tray, then lay the steaks on top. Brush the steaks with the mustard, scatter with remaining rosemary and roast everything for 20 mins until the potatoes are softened and the lamb cooked.

Using pork chops

This recipe would also work with pork chops but they need to be cooked all the way through, so roast them for 10 mins longer than the lamb.

    Was lovely. Next time, I might put the veg (did sweet potato and carrots) in for an extra 10 mins before I put the lamb on top. Served with spring greens.

    This ones a bit tricky to get right. I think I needed to slice my sweet potato thinner, because it wasn't cooked properly after the 20mins. By the time the sweet potato was ready my meat was a bit dry. Over all though, this was really tasty,and my boyfriend gave it a thumbs up. I'll try it again but will a few changes to the recipe.

    Can anyone advise what I could cook with this. I was thinking mash and brocolli, but am worried it would be too dry. Maybe potato gratin? Any advise would be much appreciated as I need to impress with this!

    fantastic. and very easy. i steamed the vegetables beforehand a little, and used potatoes, leek and butternut squash instead of sweet potatoe. i would next time add some shallots maybe.
