Limoncello syllabub with crushed amaretti

A lovely light pudding to round off an evening meal - the amaretti biscuits give a crunchy, almondy edge

Method

  1. Mix the lemon juice, most of the zest and the limoncello together. Pour the cream into a large bowl and softly whip with the sugar. Drizzle in the lemon mixture and whisk until incorporated. Divide between 6 small glasses and refrigerate for at least an hour.
  2. Just before serving, put 6 biscuits in a plastic bag. Crush with a rolling pin and sprinkle over each dessert with a little lemon zest. If you like, serve each with a biscuit.

Getting it perfect

It's very important not to over-whip the cream so whisk it until it's just starting to thicken then add the lemon mixture. Once you've whisked it again it will be at the perfect consistency.

    Really easy, and very tasty. My Italian uncle who was a chef loved it. I followed the method but found that it took a long time for the cream and liquids to thicken up and was also not sure at what point to stop. But it turned out great.

    I'm hosting a dinner party on Sat, thought I would have a trial run this evening! Has to be one of the easiest deserts I have ever made and so delicious.. My husband asked for seconds!!!! Hopefully my guests will love it too...

    Made as dessert for dinner party along with sticky toffee pudding. This was so quick and easy to make yet the flavour and texture was amazing. Made couple of times since - become firm favourite when guests come for dinner now.

    I actually made these last year, and stuck to the original ingredients. MY FAV PUDDING to date....Really easy to make and really scrummy. Just found this recipe again and will be making more....Just a note:- Limoncello is an alcohol I had a lot of confusion when in waitrose looking for it ! I didn't know....
