Mini lemon curd sponge puddings

A super-speedy pudding with a zingy hit - feels just right after pasta. Make in the microwave

Method

  1. Butter 4 x 150ml plastic pudding moulds. Whizz the butter, sugar and lemon zest in a food processor until pale and fluffy. Mix in the eggs one by one. Add the flour and pulse until incorporated. Divide between the moulds then cover with a lid or clingfilm and microwave on medium (650w) for 4 minutes. Heat the lemon curd with a squeeze of lemon juice in a small pan. Spoon over the top and serve.

Wash unwaxed lemons in warm water before zesting. The zest contains the oil with all the flavour.

    Absolutely fantastic, extremely quick preparation and cooking time. The lemon curd gives it a really zesty flavour, very tasty. I've made this many times over for friends and family - no-one yet has been able to believe it's made in the microwave. The taste and texture are as good as any steamed/baked sponge pudding.

    Absoultely AMAZING! could not believe how perfect this pudding came out of the microwave, went out and bought some plastic trays and ended up going to get more as they are so easy to use and clean! Very very tasty pudding, surprised myself!

    this recipe really surprised me. I prepared the batter before hand and cooked it in the microwave just in time for dessert. Just a hint if you cook one in the microwave reduce cooking time!
